Gluten-Free Lemon Coconut Muffins

I’m still going strong on my New Year’s resolution eat healthy! I was trying some gluten-free almond pancakes yesterday and failed miserably. Boy they tasted awful. Well learning by doing. Gluten-free baking isn’t that easy sadly and I’m going to fail more than once. These Lemon Coconut Muffins weren’t too bad but I can’t help thinking that they would have tasted much better with some chocolate chips in it. Who could actually resist chocolate?! Well I can’t and I’m sure that chocolate is healthy if you don’t overdo it. So here’s the recipe:

Ingredients:

115g coconut flour

1/2 teaspoon baking soda

a pinch of salt

3 large eggs

115g oil ( I used sunflower oil)

3 tablespoons sugar (I will add a bit more next time)

2 tablespoons lemon juice

1 teaspoon vanilla extract


Instructions:

Beat together the eggs, sunflower oil, sugar, lemon juice and vanilla extract.

Add the flour, baking soda and the salt stirring smooth after each addition.

Spoon the batter into the pan, filling each cup 3/4 full.

Bake for 20 minutes at 180 degrees until the muffins are lightly browned.

Let them cool in the pan and then turn out onto a wire rack to cool off completely

  5. Oh coconut, I am a big fan! I am sure these cakes taste fantastic! I could never stick to any diets. I once tried to go diary free and it was awful! Moderation is key. Well, not that I am one who sticks to it! ;)

    1. Well I wouldn't stick to it too but sadly I don't have a choice. I have to live dairy-, gluten-free. Though I admit it cheat with the dairy :D

So you run a separate blog from glamdevils and could still manage to upkeep 2 blogs? Kudos to you! Anyway onto this post, Your muffins look so delectable. They tasted aweful? What happened there?     1. Hi my lovely darling Tanya, lucky you! I wish I could eat regular too but I have a lot of food allergies. Well since I live gluten-free I'm feeling 100% better. Actually our whole family feels much better. Now I just have to skip the sugar (haha that's difficult). I ate whipped cream 1/2 hour ago.
